Gingery Apricot Pork Chops
2 pork chops 1 inch thick
12 ounce jar apricot preserves
1/3 cup packed brown sugar
3/4 teaspoon salt
3/4 teaspoon ground ginger
Preheat oven to 350. In a medium size bowl, mix preserves, brown sugar, salt and ginger. Stir until everything is blended well. Coat chops completely on both sides. Arrange chops in a 2 quart baking dish. Bake until pork chops are cooked through.

Was this sweet Amanda? I would put some heat in there I think. Of course I like "sweet heat". lol
Great way to prepare pork chops. More impressive that you just check what you have on hand, and figure it out from there.
